12 barista magazine C O N T R I B U T O R S 1 Tracy Allen is CEO of Brewed Behavior, a consultancy founded to offer comprehensive support to all segments of the coffee industry. He also currently serves as second vice president for the Specialty Coffee Association of America (SCAA). As one of the original mem- bers of the U.S. Barista Championship (USBC) Committee and the first chair of the Rules and Regulations Committee for the World Barista Championship (WBC), Tracy has trained multiple national and regional barista champions, and served as a judge and judges' trainer for the USBC and WBC. He is also an SCAA "Supertaster," certified cupper, and Q-grader instructor. (Cashbox, p. 80) 2 Holly Bastin got her start in the industry with PT's Coffee Roasting Co. in Topeka, Kan., and for 13 years, she managed cafés, trained baristas, coached competitors, and judged barista competitions. After coaching 2013 World Barista Champion Pete Licata, Holly now works as coordinator at Licata Coffee Consultants based in her hometown of Kansas City, Mo. Her biggest passion is people, and helping them find the path to realizing their vision. Holly is a big believer in the importance of community, both on a local and global scale. When she's not busy wandering the planet, she can be found writing about coffee in Kansas City's 435 Magazine , or working at About The Coffee, helping consumers and professionals alike find the best tools for their quest to make tastier coffee. (Pull, p. 24) 3 An epiphany moment several years ago was just the beginning of Maxwell Colonna-Dashwood's fascination with and passion for coffee. He loves so much about coffee and the elements of its world, but for Maxwell, it is coffee's potential as a culinary product that excites him most of all. He is the director of Colonna & Small's and Colonna & Hunter, both in Bath, U.K. Maxwell was the U.K. Barista Champion in 2012 and 2014, and placed in the finals in both those years' World Barista Championships. (Advanced Water Science, p. 74) 4 Kyle Freund enjoys coffee, people, writing, and photos. He works in these areas for Fairtrade International, and currently resides in Bonn, Germany. Previously communications manager at Coffee Kids and a Peace Corps volunteer in Guatemala, Kyle is now happily settled in with a lovely wife and baby in tow. (Typography for Advanced Water Science, p. 74) 6 Gabriel Caballeros Gálvez is a sociologist, filmmaker, and journalist who has lived in Berlin since 1998. He works for the German TV channel Deutsche Welle, and as an associate lecturer at the Free University of Berlin. His country of origin, Guatemala, is a well-known coffee-producing land, and he has done research there on issues such as bee pollenization and sociology in many coffee regions. He and Nora Šmahelová have been friends since 2002, and the photos Gabriel took for this issue were shot in the summer of 2014 at the former landing ground of Berlin's Tempelhof Airport, and at Chapter One Coffee. (Cover photo and photographs for Nora Šmahelová article, p. 50) 7 Dan Gentile is staff writer on the national food and drink team at Thrillist.com, where he has written extensively about coffee ranging from covering the best roasters and coffee shops to taste-testing the worst coffees in America. He is based in Austin, Texas, brews at home using an AeroPress, and will soon be going on a coffee fast in the name of journalism. Wish him luck.
