I love Chemex filters because they're perfect and they make my coffee taste its best. Why are they particularly well-suited to your specific work environment? (i.e., if you're using them for training, sampling new coffees, etc.) As a green buyer and lead roaster, most of what I'm interested in is the quality of the coffee and the effect of the roasting style. Chemex filters (and good water) are my trusty baselines so I can focus on what's important to do my job. Any special James-specific ways you like to use them, fold them? I use them in so many ways!
