C O N T R I B U T O R S 1 Tracy Allen is CEO of Brewed Behavior, a consultancy founded to offer com- prehensive support to all segments of the coffee industry. He also currently serves as president for the Specialty Coffee Association of America (SCAA). As one of the original members of the U.S. Barista Championship (USBC) Committee and the first chair of the Rules and Regulations Committee for the World Barista Championship (WBC), Tracy has trained multiple national and regional barista champions, and served as a judge and judges' trainer for the USBC and WBC. He is also an SCAA "Supertaster," certified cupper, and Q-grader instructor. (Cashbox, p. 108) 2 Andrew Bettis began working in coffee in 2011 at Velo Coffee Roasters in Chattanooga, Tenn., where he was fortunate to be able to experiment heavily with brew methods and quality-control analysis. He is a cofounder of Copacetic Coffee, and currently manages Café Integral in the great city of Chicago, where he lives with his beautiful wife. He has worked as a barista, roaster, trainer, technician, quality-control man- ager, and coffee-and-tea buyer for companies such as Torrefazione Italia, Coffee Corner, and Stumptown Coffee Roasters. He has served on the SCAA Roasters Guild Executive Council and the SCAA Sustainability Council. Darrin was Q-certified in 2008, and has served as a judge for Cup of Excellence in Honduras, Brazil, Colombia, and El Salvador. His writings have appeared in Roast Magazine , Barista Magazine , and other trade journals. Darrin is currently the sourcing director for Denver's Allegro Coffee Company, where he has served in various positions for nearly 20 years. (Field Report: Thailand, p. 46) 4 Phil Markel has been drawing pictures since he can remember. His illustrations and designs can be seen on Rogue Ales bottles, including the new Rogue Farms series. Along with beer, coffee is Phil's main beverage of choice, and he's excited about contributing to Barista . As a coffee professional, she's been a barista, retail manager, wholesale-support representative, and educator; as a journalist she's written and/or edited work for The Boston Globe , The Washington Post , Serious Eats , Saveur.com, and Every Day with Rachael Ray magazine—as well as the gem you're holding in your hot little hands. Her writ- ing has appeared in publications including Travel + Leisure , The Art of Eating , Portland Monthly , and Modern Farmer , among others. She is the author of Left Coast Roast , a guidebook to artisan and influential coffee roasters on the West Coast. She is based in Portland, Ore. (Coffee Genetics, p. 82) 8 Devin Pedde is a Los Angeles—based photographer. Specializing in portraits (Jesse Tyler Ferguson, Dan Wilson, Sean Watkins, Claire Coffee) and travel photography (Japan, India, Israel, California), Devin has had his work featured in various outlets, including Variety , Spin , LA Weekly , and Curbed LA . He began his career at a tender age back in the late 1980s, working for Dark Horse Comics. There, he created Devil Chef, and he still isn't sorry. After that auspicious debut, he's done illustrations and comics for dozens of lucky publishers like this one. Sorry, ladies, he's married. Sorry, dogs, he has a dog. (Illustration for Cashbox, p. 108) 10 Ashley Rodriguez thought that she'd take a break from teaching middle-school science and putz around in a coffee shop for a few months. She ended up digging it way more than teaching (and was vaguely better at it). After spending five years making coffee in New York, she now works for Sightglass Coffee in San Francisco. (Social Media, p. 102) 11 After earning her bachelor's degree in fine art at the University of California, Santa Cruz, Greta Romelfanger went on to specialize in scientific drawings of the natural world. She worked as a barista in Portland, Ore., at the Albina Press, where she curated art shows in addition to crafting espresso drinks. Greta moved to Seattle to complete a degree in natural-science illustration at the University of Washington in 2011, and then returned to Portland, where she continues to draw daily for a number of publications, as well as fortify herself with the city's amazing coffee. His passion for coffee and technology led him to start modifying a three-group La Marzocco Linea for his home kitchen back in 2004. Shortly thereafter, he founded Espresso Arts Catering, catering espresso to the Portland metro area. Wes's desire to serve guests beautiful coffee in beautiful spaces then led him to design and build Case Study's three cafés. Wes is currently building out the company's roastery and warehouse, and developing the future plans for Case Study Coffee. In his spare time, he can be found pursuing his passion for drums and perfecting his home recording studio. He lives in the forest with his wife and business partner, Christine, and his dog, Shandy. (Foam, p. 28) 13 Akaash Saini began his coffee career by taking part in the coffee and barista community. Though he didn't work in coffee, he regularly attended coffee events, and even competed in the 2012 Northwest Regional Brewers Cup and the U.S. Brewers Cup Competition. He went on to work for a number of specialty-coffee shops and companies in the Seattle area. Akaash continued competing in the Brewers Cup, placing fourth in the 2014 Northwest Regional Brewers Cup, and first in the 2015 Northwest Regional Brewers Cup. He recently qualified for the 2016 U.S. Brewers Cup taking place in Atlanta in April. He currently works at Equator Coffees & Teas as the community engage- ment manager.
