Too often in the United States, cafés put all of their focus on the coffee and none on food. I simply don't understand this. It's a huge missed op- portunity for profits and customer satis- faction. It's been my experience that the only ones who want only coffee and have zero interest in food are professional coffee people. So what's that, less than 1 percent of your customers? Guests want food, and I don't mean a hard bagel or dry scone. I digress—I simply meant to say thank you for this article, and I look forward to more on the topic. I've been doing this a long time and it's only human to forget or take for granted some things sometimes, but I never want to take my staff for granted or treat them less than great. They deserve it. Wonderful tips in this story. I have saved every issue of Barista since I started subscribing about eight years ago—this is why! I said to them, "See, this guy worked his ass off when he was just an employee, and now he's one of the owners!" It inspired them a lot. My boss got me a subscription to Barista Magazine when I fi nished training, and I love it! It's so pretty and it's so cool! When I get my new copy in the mail, I do a special thing: I go to a different café than where I work, and I buy myself a coffee and I sit and read it, sometimes all at one time.
