THIrd PLACE Kapo Chiu, The Cupping Room Barista Champion of Hong Kong What was the inspiration for your signature drink? My signature drink took inspiration from the world of cocktails, where the pri- mary goal of combining ingredients and spirits was to make something tasty in a fun and engaging way. I think that signature drinks should be delicious, and this was the main goal when designing my drink. Does it have a name? Smoked GV72 Negroni. What coffee did you use? Gesha Village auction lot 72 Oma Gesha 1931 Natural. What was the exact recipe? I used: • 10g Seedlip Spice (a nonalcoholic gin-like beverage "distilled" with allspice, cardamom, grapefruit, and lemon peel) • 0.1g of fl avorless thickening agent (xanthan-gum solution) dissolved with 10g of water • 20g of nonalcoholic whiskey-barrel-aged honey • An aroma of French Earl Grey tea mixed with dry ice • 4 shots of espresso Were there special drinking instructions for the judges?
