"One of the other cool parts [of Carmo Best Cup] is that buyers and roasters and cuppers all get to interact with each other," says Noah. "[Cupping] is such a solitary experience—it's done alone. The staff at CarmoCoffees sets up the tables for another round of cupping. They have some cool custom gear like this hot-water pistol that make for streamlined and effi cient cuppings. Each day started with an intensive cupping and calibration session where the judges talked about what stood out to them on the table. "We have all levels of coffee-buying experience," Noah says.
