DIAL IN THE EXTRACTION
The wait is over! The Stella di Caffé
DCL Lever espresso machine has
arrived. The Stella di Caffé DCL concept
machine was showcased at the Specialty
Coffee Association of America (SCAA)
conference in 2012, and will be officially
released at the SCAA show April 11–14
in Boston. This lever machine manually
replicates the VIPER system (which
stands for "Variable Infusion Pressure
and Extraction Regulation") for baristas
who want more control, and allows the
user to make pressure adjustments
throughout the extraction process with
the turn of a dial. See it for yourself at
