They are everywhere, all the time! My favorite tool that I always keep by my side is a Winco pastry brush that we purchased at a local restaurant supply store. The bristles are a little softer than a normal paint brush and don't fall out all over the place. They come in different sizes so you can get into all the nooks and crannies. They are really great for clean freaks who like their grinder areas spotless at all times." They make my life as a barista so much easier. I'm able to maintain the same ratios for coffees to-go as I do for all my in-house pours. The current trend industrywide is to offer 8-ounce and 12-ounce cups, which means that coffees served in the 8-ounce cup are milkier and don't taste the same as coffees served in my 6-ounce ceramic cups. Three years ago, I found this sweet little coffeecup set in the IKEA children's department. They hold exactly one ounce, including crema, so it comes down to 15-20mL liquid—perfect for my ristretto. Every Saturday, my school is open as a shop, and people come and buy my coffees, drink some cups, chat, and exchange their knowhow.
