FROM THE MAILBOX We at my shop were very happy to see Jess Steffy on the cover of your last issue [October+November 2014]. She is a real person, a real café owner, someone who gets the job done. And she is a woman, which is always nice to see on your cover. So imagine our surprise when we saw the new issue [December 2014 + January 2015] with another woman on the cover. Another café owner! Another person who is a role model in part because she gets her hands dirty and works bar when the job needs to get done. I guess we are saying a few things here, Barista Magazine: We like seeing strong women on your covers, and we like seeing people who may be famous judges or competitors or humanitarians, but at the end of the day, they have respect for the job of being a café owner. It's hard work; it's rarely glamorous; and we love it. Jess and Nora seem to love it, too. Tina Jones and Grace Kline Medford, Ore. Yes to science! Thank you for publishing Maxwell Colonna-Dashwood's fascinating article about his work with water. Barista Magazine has been publishing the best science articles we can find online or in other coffee magazines, and I and my colleagues could not be more pleased. Please keep them coming. Not gonna lie—I turn to the "I Love Stuff " column first thing every time an issue of Barista comes in the mail because I want to know what the cool baristas are pimpin'! But the December issue [December 2014 + January 2015] is always the mother lode with the "Best Bar Tools" one you do every year. I own two shops, and I think I buy at least half the stuff in "Best Bar Tools" for my baristas to use. Gnarly.
