FROM THE MAILBOX This is a marvelous issue, Ken and Sarah [June+July 2015]. I just don't know where to start. There is terrific educational information for me and my husband to digest as owners of several cafés in the Cincinnati area, such as the latest installment of the "New Adventures in Cold Brew" series about signature drinks—we will use that! I am also looking forward to putting Andy Freivogel's suggestions about PCI compliance to good use. The stories from afar, however, especially Sarah's report from Sumatra about the DC Campus trip to see the Orangutan Coffee Project, have completely stolen my heart. This is why I dedicate my life to specialty- coffee retailing: to be a part of doing something good for the planet. Thank you for the beautiful reminder. This is timely information I need to know in order to run my café. Just renewed my subscription for another two years because of it. Jonathan Cooley New York City I enjoyed the article [June+July 2015] about the new World Barista Champion, Sasa Sestic of Australia, very much. He sounds like a wonderful ambassador for the coffee community for this next year—very mature, and coming from a different perspective than those before him. In fact, I quite enjoyed the whole WBC section. How wonderful to learn more about the complicated signature drinks of the six finalists—one can barely register what's going on when you watch from the audience or online, they are so complex! I look forward to the Barista Magazine WBC issue every year. I cannot attend myself—someone has to mind the shops!—but I feel part of the action watching the livestream and then following up with Barista's annual coverage. Keep it up!
