Dale and his coach, Pete Williams, got the idea for Dale's competition routine—which focused on aromatic compounds—while at an exhibition on perfumes held in London. "While the connection between aromas and fl avor is something that forms a basis in most sensory training and is familiar to many baristas, this exhibition used objects, textures, sound, and materials to deliver a multi-sensory introduction to scents, and was a key inspiration to what we presented in Seoul," Dale says in his two-part interview at Barista Magazine Online.
