In the 18 years of World Barista Championship (WBC) compe- titions, there have been some spectacular signature espres- so-based beverages. Along with the professional growth and development of the competitors, the contest structure and rules have been reworked and have in some ways become more restrictive to refl ect the supremely high standards of the people, skill sets, and equipment involved. The signature-drink portion of the competition, however, has remained the prima- ry area where baristas can stretch their creative muscles and communicate the sensory experience of their chosen coffee in exactly their own unique ways. Over the years, we've seen some unforgettable creations— notable for as many laudable reasons as bizarre ones. (Kan- garoo-meat macchiato, anyone?) Each year as part of Barista Magazine's WBC coverage, we interview the six national barista champions who made it to the pinnacle of this most internation- ally revered of coffee competitions—the fi nal round—about the impetus and intent behind their signature beverages, as well as their methods and ingredients.
