It would seem our brains and bellies were full of coffee wonder and treats, but there were still more to come: from 3:15 to 4:45 p.m., attendees chose among the fascinating lecture, "Secrets of a Champion," led by former French Barista Champions Ludovic Loizon and Anthony Calvez; "Pairing French Pastries and Teas," for which my newfound hero, pastry chef Christophe Felder, returned with some of the most superb French desserts I've ever tasted, and an assortment of fantastic teas presented by Lydia Gautier of Comptoirs Richard; and finally, "Coffee and Wine: Opposed Parallels," led by Jean Lenoir and Myriam Huet, who hails from Vins Richard. As I was otherwise occupied with the pastries, Anastasia and Sonja joined the wine tasting, and emerged with eyes shining and delight in their voices as they told me of the curiosities they experienced comparing some of the best coffees with some of the world's most renowned wines. What a perfect time, then, for a session on coffee cocktails? Acclaimed bartender Victor Delpierre—who has competed in the French Barista Championship and has worked as a bartender at the Ritz in Paris— charmed us with a discussion of the assorted coffee liqueurs available to home bartenders, and some neat tricks for creating espresso-based cocktails guaranteed to wow your customers. The mood was celebratory as Barista Nation Paris came to a close. Attendees left invigorated, holding goodie bags from Cafés Richard and the many sponsors, and instructors smiled happily from the enthusiastic reception they had received. In all, Barista Nation's first European tour stop was a grand success. Throughout the Barista Nation Paris event, guests were invited on periodic tours of the adjoining Cafés Richard roasting facility.
